A Right Royal Affair!

To celebrate the Queen's Diamond Jubilee we thought we would share this recipe and cake baked by our very own queen of baking Sue Adams, you can also see our wonderful Jubilee cake wraps and toppers on the cupcakes!
Isn't it brilliant! Here is the recipe if you fancy making one for your Jubilee street party:

Sue's Fabulously British Union Jack Cake

For the cake

280g unsalted butter
280g caster sugar
5 eggs
280g self-raising flour
1 tsp vanilla extract

For the sugar syrup

5 tbsp water
125g caster sugar
1 tsp vanilla extract



For the butter cream

250g unsalted butter
250g icing sugar

To decorate

Raspberries and blueberries (about 400-500g each)
1. Preheat the oven to 180 and line the base of a 18" x 12" baking tray with straight sides, about 1" tall.

2. In a mixer, beat the butter and caster sugar together until pale and fluffy, about 5 minutes.

3. With the mixer going on a slow setting. add the eggs one at a time, slipping in a tablespoon of flour about half way through to stop the mixture from curdling.

4. Sift in the flour and mix until just combined and then stir in the vanilla.

5. Tip into the tray and spread to cover the base, and bake for 15-20 minutes until the top is golden and the sponge springy to the touch.

6.  Meanwhile, make the sugar syrup.  Place the water and sugar in a pan and bring to the boil over a low-medium heat.  Remove from the heat an leave to cool before adding the vanilla.

7. While the cake is still warm, prod all over with a skewer and spoon the syrup over the cake.

8. Leave to cool.  Once cool, you can remove from the tin, but it is tricky.  You can't see the tin so I leave it - it's also easier to transport this way.

9.  Make the butter cream by sifting the flour into an electric mixer and mixing with the butter for at least 5 minutes.  Once it is light and fluffy, mix in the vanilla.

10. Spread the butter cream over the cake.  You do not want to see any cake, as this will form the base of your flag.

11.  With a blunt knife, gently draw four lines on your butter cream - right to left, top to bottom and corner to corner on both sides.  on either side of the lines for the vertical and horizontal cross, place a raspberry so you have two lines of fruit going down, two from side to side.

12.  Place one row of raspberries on the lines making the corner to corner crosses.
(if you want to true Union Jack representation, place the raspberries below the line on the right hand side and above the line on the left hand side).


13. Finally, will between the red lines with blueberries.  This will create the blue background and the butter cream will create the while outline on the red crosses.

With Glastonbury festival this weekend we are all thinking of going to Festivals and Camping.We love the idea of glamping, it's camping more glamorous twin.So it is out with the leaking tents and tinned food and in with the pretty tepee tents, bunting ,polka dota picnic hampers and yummy cooked meals! who thought camping had to mean roughing it?

A Day Out In Hartland

A couple of times a month i like to go for a day trip and act like a tourist for the day in our lovely area i thought it would be fun to share my adventures with you on here. So last Sunday we headed for Hartland and visited Hartland Abbey where Prince William spent his Stag do!


We had a lovely time wandering around the Gardens!
And watching the waves crash at Hartland quay.

I love walking in the woods especially at this time of year,so last week we headed for the woods behind Watersmeet to look at the gorgeous Bluebells and what a pretty sight they were,we then walked on to Rockford and stopped of for a yummy pub dinner and some wine!

April News!

Its April and we have a spring in our step! Most of our new stock has arrived in our shop and we have been busy displaying it all,we now have a dresser in our shop too, displayed with union jack bunting,pretty polka dots,Cornish blue and Gisela Graham mugs coaster and jugs!


And after a long wait our window is now looking pretty!


Come and visit our shop 1 Queen Street, Lynton North Devon to see all our lovely new products for yourself or if you can't make it to our shop,no need to worry i will be adding  them to our website.

With the Royal Wedding and Easter all this month it is the perfect time to celebrate with a spring tea party!
 Hang up some  union jack bunting,bake some goodies bring out your best teapot and tea cups,decorate the table with baskets ribbon and chocolate eggs and enjoy with your family and friends for the perfect Spring treat!

It's March!

It's March and finally feels like we are shrugging off the winter chill..well just about!

Spring is insight and we can look forward to the countryside coming alive with new life and can enjoy long walks on crisp spring  mornings.

Merry Christmas From The Willow Team!



It's Christmas Eve,  the bells a jingling because it is less than 24 Hours until the big day. The time we start asking ourselves have i  brought enough presents? have i got enough food? Am i ready? Wrapping up the pressies and making sure your ready for the fun and festivities.Because this time tomorrow many of us will be carving up the turkey and spitting out the sprouts.Its when the magic of Christmas really begins,and this year we will have a White Christmas,looking out the window as i type it looks like a Winter wonderland.



We have been really busy with all your Christmas orders this month thank you very much and we hope you all love your purchases, we have some gorgeous new products ready for our website in 2011 very exciting!



All  website orders over the festive period will be posted on the 4th of January.

We would like to wish two members of our team  a Very Happy Birthday Lauren who's 18 on Boxing Day and Sam who is 21 on the 27th Dec.
